How Many Calories Are in Stinky Tofu (臭豆腐)?

Stinky tofu is fermented tofu, most often deep-fried until the outside is dark and crackling, then served with pickled cabbage and a garlic-chili sauce. The fermentation itself barely changes the calorie count from regular tofu — what actually decides the number is how much oil the tofu soaks up in the fryer.

Does the smell mean it's unhealthy?

No — the smell comes from the fermentation process itself, the same way other fermented foods develop a strong smell without being any less nutritious. A steamed or braised version made from the exact same batch of fermented tofu has the same distinctive smell but a fraction of the calories of the deep-fried version. Smell and calorie count are two separate things here.

Night-market cart vs. restaurant portion

Night-market carts in Taiwan typically serve 4–6 pieces per order, which is the range used above. Sit-down restaurant portions often run larger — 6–8 pieces — and some kitchens add a fried-garlic topping or extra sauce that adds another 30–60 kcal on top. If you're logging a restaurant order rather than a night-market snack, expect the higher end of the range or slightly beyond it.

Common questions

Is stinky tofu vegan? The tofu itself is fermented soybean with no animal products. Check the dipping sauce, though — some vendors build the chili sauce on a fish-sauce base.

Why does it turn so dark when fried? The fermentation changes the protein structure, so it browns differently than fresh tofu. The color comes from the fermentation, not from being overcooked.
